When juicing, the best vegetables to use for making fresh vegetable juicer recipes are those that are the most colorful. The more colorful any given vegetable is the more nutritious it is going to be, especially in antioxidant content. In fact it is antioxidants that put the color in vegetables as antioxidants also double as plant pigments.
Choose Organic?
Organic vegetables are clearly more expensive, so if we can’t always afford organic, then that’s no problem. Non-organic vegetables are still very nutritious and good for us. Just make sure to buy vegetables as fresh as possible and if they are not organic then scrub them well to remove as many pesticides as possible. If the vegetables have been waxed then its important to peel. Organic or not, if vegetables aren’t fresh but are looking wilted and rubbery then they will be nutritionally inferior and lacking in life essence.
Choose Variety
To get a healthy variety of nutrients and antioxidants then we need to eat a variety of vegetables and in different colors. So rotating the vegetables we eat is the best way to go, rather than going for same old carrot and apple over and over again. Different colors mean different antioxidants. So here is a quick guide:
1) Go Green. Green leafy vegetables like kale and spinach and cruciferous vegetables like broccoli and brussel sprouts are a great source of the green plant pigment and antioxidant chlorophyll.
2) Red vegetables like red bell peppers and tomatoes are an excellent source of lycopene, a potent cancer-fighting antioxidant that is especially powerful at preventing the onset of prostate cancer.
3) Orange vegetables like carrots and butternut squash are a great source of the antioxidant called beta-carotene. Beta-carotene is important for eye-health and helps protect us from heart disease.
4) Blue/purple vegetables such as purple cabbage and purple broccoli are loaded with anthocyanins. These are the same antioxidant that put the heart health benefits into red wine.
5) Yellow vegetables include yellow bell peppers, and um, not much else! Unless you come across a rare yellow carrot (yes they do exist). Hydroxy-carotenoid is the antioxidant that puts the yellow in vegetables and fruits. In fact you might want to drink a few fruits juices, as you have more choice in yellow fruits! Those on the grapefruit diet are getting plenty of hydroxy-carotenoid.
Which Juicer?
To get the very best out of your vegetables you will need a juicer that delivers the most nutritious juices. In this case masticating juicers are the way to go. Masticating juicers use a cold-press method that preserves nutrients and doesn’t kill them as a result of heat damage and oxidation.
