1 tbsp butter

1 tbsp flour

1 cup cubed Emmentaler cheese

1 cup cubed Cheddar cheese

1 cup Gruyere cheese

1 clove garlic

1 cup white wine or beer

Salt and pepper

Directions:

1.     Rub the peeled garlic in the interior of a medium sized fondue set.

2.     Set heat to medium low to melt the butter. Then add the flour and cook for at least five minutes, constantly stirring the mixture.

3.     Once flour is brown, add the wine and stir continuously using a wooden spoon until with smooth consistency.

4.     Add a handful of the three cheese cubes one at a time; stir continuously until cheese melts. Allow simmering for few minutes but avoid boiling the mixture.

5.     Serve on a fondue pot while warm; frequently stir the mixture to avoid hardening.
